Salad Pizza

I have yet to meet someone who doesn’t like pizza. I think that love for pizza is created when we’re kids and carries through to adulthood. The only difference is as we get older we begin to feel guiltier about eating said delicious melty cheese on bread. So one night when I REALLY wanted pizza but still wanted a healthy option, I thought I should have salad with the pizza. Which turned into salad ON the pizza and it was the best idea I had in a long time!

it’s definitely not the hardest

Thing in the world to make, especially if you get a pre-made pizza crust. I’ve been really digging on the cauliflower pizza crust that Trader Joe’s just started carrying, but really anything you want would do fine. You could even make your own pizza crust if you were feeling so inclined.

Not drown your salad in dressing. The dressing (while delicious) can make the dough get a little soggy. Granted you’re going to have a lot of dressing but you can always store and use the leftovers during the week for another recipe. Like maybe the Summer Quinoa Salad or even the Watermelon Salad.

Prep time: 20 minutes

Cook time: 30 minutes

Pizza

Pre-packaged crust

1 cup pizza sauce

8-12 ounces shredded mozzarella cheese

Salad

1 head of red leaf lettuce

1 Roma tomato, diced

3 Peppercinis, diced

1/4 cup of salami, diced

1/4 cup black olives, sliced

1/4 cup mozzarella cheese, shredded

1/4 cup of red onion, finely sliced

1/4 to 1/2 cup balsamic vinaigrette

Preheat your oven and cook the pizza dough according to the instructions on the package. After the dough is cooked, put on your tomato sauce and cheese and cook for an additional 5 to 10 minutes until the cheese is melty and bubbly.

Cut your pizza into slices and put aside. Place all of your salad ingredients into a large bowl, toss with the dressing and place on top of the pizza! Enjoy!
