Watermelon Salad

This is one of my hands down favorite salads to make in the summer. As long as the watermelon is fresh and sweet, this salad will be amazing. It's simple to make, definitely fancy enough to use for a summertime dinner with guests, and pairs well with most fruity white wines too.

We love this one for lunch after a long morning at the pool, because it's so satisfying but doesn't leave you feeling super full or icky. 

It's also one of those salads that will hold well overnight as long as it doesn't have the dressing on it. My husband has taken it multiple times for leftovers at work, and the salad maintains its crispness.

Watermelon Salad

Prep Time: 10 minutes

Cook Time: 30 minutes

Serves: 2

2 Chicken Breasts, grilled and chopped

1/4 Cup Red Onion, diced

2 Cups Watermelon, diced

1/2 Cucumber, diced

1 Avocado, diced

4 Cups of Spinach, rinsed and diced

1/2 Cup Balsamic Vinaigrette

Salt and Pepper to taste

Turn on your grill. Season your chicken with salt and pepper to taste. Grill your chicken until it's cooked all the way through, it's internal temperature should be at 165 degrees. Place it aside and let it cool.

Toss all your other ingredients into a bowl, add in the chicken, toss with the dressing, divide into bowls and serve!
