Breakfast Pizza
Friday nights are pizza picnic and a movie night at our house. Preferably an old school Disney movie, like Cinderella or Aladdin because I have to expose Grace to the classics right?
We started this little tradition because we’ve been having so many crazy transitions in our house that I felt like Grace needed something that was consistent and tangible to look forward to at the end of the week. And really, who doesn’t like pizza?
I love pizza. Seriously if you haven’t checked out the Salad Pizza recipe you totally should give it a shot. The only thing, for me at least, that is arguably as good as pizza is breakfast. Wow do I LOVE a good waffle. Or pancake. I’m not picky as long as there’s bacon involved.
So here we are prepping for another pizza and a movie picnic night and I want breakfast. But Grace is a creature of a routine (like most little kids), so I know there is NO negotiating out of pizza. Pizza will be happening. But I thought to myself “hey there awesome self, why not combine your two favorite things into one amazingly fantastic thing?” and BOOM, the Breakfast Pizza was born.
The best part about this is that since you’re using the Cauliflower Crust (I get mine at Trader Joe’s), the pizza doesn’t feel nearly as heavy as it does with a traditional crust. I have made this with a more traditional crust as well as with the cauliflower crust and both are equally amazing, so it really depends on what sounds better to you!
Because at the end, the creaminess from the egg with the richness of the cheese and the saltiness of the bacon makes for a dangerously delicious combination that you won’t be writing off any time soon! This one is also perfect if you need to bring something to a brunch and you want to look “fancy” without really trying!
Breakfast Pizza
Prep Time: 5 minutes
Cook time: 30 minutes
1/3 cup basil pesto
1/2 cup shredded mozzarella
4 eggs
1/4 cup Pancetta or 2 slices of bacon, cooked and diced
Preheat the oven and cook the crust according to the directions on the box. Once the crust is cooked, spread the pesto evenly over the crust, top with cheese, making little wells in the cheese for the eggs. Crack the eggs into the wells, sprinkle the bacon (or Pancetta) over everything and cook for an additional 5 minutes. Then broil for an additional 5 to 8 minutes or until the eggs are cooked to your liking and the cheese is bubbly. Serve hot! Enjoy!
