Zoodle Pad Thai
my family loves thai food
Ironically enough, Thai and Chinese noodles are the only kind of noodle my daughter will even eat. I'm not kidding. You would think that being Italian, my daughter would be really excited about noodles and gravy. The good red gravy like my Grandma used to make. But nope. She is NOT a fan. Don't get me wrong she'll go for the meatballs, but not the spaghetti and gravy.
However, she LOVES Thai noodles. It's a guaranteed no stress dinner every single time. You know the kind of dinner I'm talking about. The kind where you don't have to convince your kid that the food is good, you don't have to bribe to get dinner in their stomachs or worry about the meltdown that will come upon the discovery of an errant onion.
Even if I use zoodles instead of noodles, as long as it's Thai inspired, I know I'm looking at a win. But the peanut sauce with this one took everything to a whole other level. Even the dogs were begging to get a piece! I hope your whole family enjoys it as much as mine!
zoodle pad thai
1 pound chicken diced into 1 inch pieces
2 tablespoons sesame oil
3 carrots, diced
1 red bell pepper, diced
1/2 onion, diced
2 medium zucchini, spiralized
Salt and Pepper to taste
Cilantro for garnish, optional
Siracha optional
Peanut Sauce
1/2 cup creamy peanut butter
1 tablespoon sesame oil
3 tablespoons soy sauce
Juice of one lime
1 tablespoon minced ginger
3 cloves of garlic, minced
2 tablespoons of agave
1/4 cup of warm water
Combine all the sauce ingredients in your blender and blend until smooth, set aside.
In a medium sautee pan or wok, heat the sesame oil. Salt and pepper the chicken and then add it to the heated pan, sauté until cooked through, drain the juices and set aside.
In the same pan, add in the carrots, onions, and red bell peppers, and cook until tender. Add the chicken back to the pan and mix until rewarmed and well combined. Add in the zoodles and mix until well combined. Toss everything with the sauce and serve warm with a garnish of cilantro, chopped peanuts, a wedge of lime and some Siracha! Enjoy!
