Turkey Chili
So we hit a huge milestone in our house today. My kiddo FINALLY got into a big girl bed. Now I know what you’re thinking, she’s huge, she was way too old to be in a crib, why didn’t you do this earlier, and agreed on all those fronts. I never pushed it with her though because she didn’t want a big girl bed. Every time we would ask her if she wanted a big girl bed (which by the way has been sitting in my guest bedroom for the better part of 6 months), she would tell us that she loved her crib and didn’t want it.
Honestly, worked for me. She slept well in her crib, she never tried to climb out of it and she loved it. So we kept it. With the agreement that when she got too big (because home girl is TALL), we wouldn’t have a choice but to give her the big girl bed. She agreed and everyone went on their happy way.
Well apparently until today when she woke up and told us that she was ready for a big girl bed. So onto Target for sheets that she was very excited to pick out and on starts the acclimation process of a big girl bed (because she knows how easy it is to climb out of her bed). And on come those bittersweet feelings of being excited that she’s hitting this huge milestone, arguably one of the last of the baby era, and sad that she’s hitting this huge milestone because it really does mark the end of her baby and toddler era.
On days like these, well and the cold night definitely helped, there’s nothing better than comfort food. But comfort food with a healthy twist because I'm all about comfort food without the guilt. This was one for the record books because not only was it a hit with the hubby but the kiddo also ate it!
It was thick and hearty, and topped with some sour cream, cilantro and chives it was taken to the next level of deliciousness!
Turkey Chili
Prep time: 10 minutes
Cook time: 20 minutes
Serves: 6
4 tablespoons olive oil, divided
1 pound ground turkey
1 onion, diced
4 cloves of garlic, minced
3 sweet potatoes, peeled and diced
3 cups of chicken or bone broth
1 can of black beans, drained and rinsed
1 can of Northern White beans, drained and rinsed
1 4 oz can of green chiles
1/2 cup frozen corn
Cumin, Oregano, Cayenne Pepper, and Chili Powder to taste
Salt and Pepper to taste
Grab your medium sautee pan and heat 2 tablespoons of olive oil over medium heat. Add in the onions, green chiles and garlic, and some spices, cooking until the onions are translucent, around 3 to 4 minutes. To the same pan, add in the ground turkey and cook until crumbly and cooked through. Set aside.
Get your stock or soup pot, heat the remaining olive oil over medium heat, then add in the sweet potato. Cook the potatoes until slightly crispy, then add in the broth and bring to a simmer. Cover and cook on low for 15 minutes or until the sweet potatoes are soft. Use either an immersion blender or your regular blender to process the sweet potato mixture until smooth. Put the sweet potato mixture back into your soup pot (if you used a regular blender), add in your ground turkey mixture, your beans and corn to the pot (and more spices if you want), stir and cook on low until the mixture is heated through. Once everything is well combined and heated through, serve with the toppings of your choice! We liked sour cream, cilantro and chives! Enjoy!
