Tilapia and Roasted Veggies
I just discovered the most amazing thing in the world. The taste of broccoli that’s been slightly burnt from cooking in the oven. Call me crazy but I’m a huge fan. Just that little bit of brown gives the broccoli such an amazing crunch and with some fresh squeezed lemon over it, there’s a brightness to the broccoli that I literally can’t live without.
Of course now I’m finding every opportunity to incorporate this goodness into every meal possible not just because I love it but also because it’s a current family favorite. I don’t know if it’s just me, but there’s nothing better as a mom (well it’s up there at least with victory dance worthy things) then sitting down to dinner and not having a single person complain about what I cooked. It makes me feel like I negotiated some huge trade deal or world crisis. I know, I know it might not seem that major to you, but when you’re cooking for a grown adult with no picky food eater tendencies (but wants the healthy stuff) and a kiddo who will look at food sometimes and blanket decide she doesn’t like it, if I can get a win, I’m taking the win.
Tilapia and Roasted Vegetables
Prep time: 15 minutes
Cook time: 30 minutes
Serves: 4 people
4 medium Tilapia filets
2 cups of broccoli, rinsed and roughly chopped
1 acorn squash, seeded and roughly chopped
4 tablespoons of olive oil, divided
Salt and Pepper to taste
Juice of one lemon
Preheat the oven to 400 degrees, grab your biggest cooking sheet and line it with tin foil, then spray it with non-stick spray. Lay the fish, broccoli and squash in a single layer on the cooking sheet. Drizzle 2 tablespoons of the olive oil over the fish and the other 2 tablespoons over the veggies, sprinkle salt and pepper over everything (I also used garlic powder and onion powder, but that’s completely personal preference) and bake for 30 minutes or until the fish is flakey, the squash is tender and the broccoli is slightly charred. Squeeze the lemon juice over the top of the broccoli and the fish and serve while hot! Enjoy!
