Slow Cooker BBQ Pulled Chicken
The crockpot is my friend. I've already burned through 2 crockpots I use them so often. I love coming home and smelling dinner already cooked, and I love the ease of the crockpot. On crazy and chaotic days, the crockpot is my best friend because I can throw dinner in there and not have to worry about it until I need to eat it. The best part is that I can prep the recipe the night before, leave everything in the crockpot in my fridge and then just literally plug the whole thing in the next day and go to work. It's amazing.
This recipe is amazing. I don't know why I didn't think of this sooner, but it's just two ingredients, cooked all day long and the end result is pulled chicken that tastes like it came out of a BBQ joint, when really it just came from the crockpot.
The leftovers are also good, and you can serve it however you like, on rolls like a sandwich, with a side of good ol' mac 'n cheese, or french fries. It makes a ton, and is a total crowd favorite in my house. It's my go to recipe when I need something that requires minimal effort for dinner but dinner needs to feed the masses!
Slow Cooker BBQ Pulled Chicken
Prep time: 10 minutes
Cook time: 4-8 hours
Serves: 6-8 people
2 lbs boneless, skinless chicken breasts
2-3 cups BBQ sauce of your choice
Spray your crockpot with non-stick spray. Place in the chicken, top with the BBQ sauce and stir until the chicken is evenly coated. Cook on low for 6 to 8 hours or high for 4 hours. Shred the chicken with a couple of forks once it's done cooking, and serve!
