Ricotta Cheese Snack
I have always loved cheese. Especially Ricotta cheese. I actually regularly tell people that cheese is something I will not cut out of my diet unless there’s a dietary necessity to cutting it out.
Luckily I’m not lactose intolerant so the cheese stays. Which is great on those days when I need a quick snack that’s delicious and has a little bit of sweetness to it but is still healthy.
Ricotta cheese took the place of yogurt for me in this sort of parfait one day…because it was all I had in my fridge. I came to absolutely love it as a substitute for yogurt because of it’s creaminess and how it pairs well with so many other flavors.
I have done it as a toast with tomatoes and salt and pepper, but my go to favorite is parfait style with strawberries, almonds and honey. It’s the perfect afternoon pick me up!
Ricotta Cheese Snack
6 oz of Ricotta Cheese
1/3 cup of fresh fruit (of your choice)
1 ounce of sliced almonds
Drizzle of honey
Prep time: 5 minutes
Serves: 1
Place your Ricotta cheese in a bowl, top with fruit, almonds and honey, serve while cold! Enjoy!
*You can also enjoy it spread on toast with some diced up tomatoes, chopped basil and a drizzle of olive oil
