Roasted Potatoes
i love potatoes
I'm not afraid to say it, potatoes are one of my favorite things to eat and I'm not even picky when it comes to the form they come in. French fries, mashed, roasted, pancake, whatever the case may be, I will take them.
Sometimes I just need to have some potatoes on my plate with dinner. Especially if we're having steak for dinner. That's such an old American classic, steak and potatoes right?
While we normally incorporate something green or something of another vibrant color with our dinner, steak included on that, if we're having steak, we're having some form of potato.
But sometimes I don't want to put in the effort of prepping potatoes to make mashed potatoes or even pancakes. In that case, a pan of roasted potatoes is the easiest way for me to go.
Everyone loves it, the prep is easy, and the most involved part of it is just the cook time, but leaving something in the oven is still easy enough for me!
Roasted Potatoes
3 cups red potatoes, rinsed and chopped
3 tblsp olive oil
salt and pepper to taste
Preheat your oven to 425 degrees and line a cookie sheet with tin foil, spraying with non-stick spray. Rinse and chop your potatoes, place them on the tin foil, add in your salt and pepper, drizzle with olive oil and give everything a good toss until the potatoes are evenly coated. Cook for 30 to 45 minutes or until tender! Enjoy!
