Overnight Oats
Breakfast is arguably my favorite meal of the whole day. It’s just not something that happens in the traditional aspect everyday. Let’s be honest, breakfast most days happens quickly in the midst of putting shoes on the kid, getting the dogs organized and running out of the door so we can all get to wherever we need to be on time-ish.
I’m a huge fan of breakfast for dinner or even breakfast for a snack. Especially if it doesn’t involve a whole lotta work or prep because you know that’s my jam. As much as I LOVE cooking and LOVE being in my kitchen, most days don’t leave me with a lot of time to be in the kitchen pursuing my cooking passion.
But I still want the best food for me and for my family so when overnight oats became a “thing”, I definitely started experimenting because in theory it seemed amazing. I mean it cooks by itself overnight in my fridge, there’s really not a whole lot better than that, am I right??
I wanted a basic recipe though, nothing with like a “theme” because I wanted to be able to add whatever toppings sounded good and I had available in my house. Quite frankly, I wanted to make this all accessible for what I had in my house because the milk and yogurt I have changes on a regular basis too!
So this is a super basic recipe with the hope that you’ll get creative and add on the toppings that sound the most amazing to you or even use the milk or yogurt that you find delicious (or just have in your fridge)!
I’m a huge fan of Greek vanilla honey yogurt, almond milk and then some banana, peanut butter and coconut nectar on top! It’s so hearty and filling but surprisingly healthy (of course depending on your toppings). I also make this one in HUGE batches because it’ll hold in your fridge for around 4 days! Grab your individual serving Tupperwares and get preppin’! Enjoy!
Overnight Oats
Prep time: 5 minutes
Cook time: 8 to 10 hours
Serves: 1
1/3 cup rolled oats
1/3 cup milk product of your choice
1/4 cup yogurt of your choice
2 tablespoons ground flax seed
1 tablespoon chia seeds
1/2 tsp vanilla extract
Combine all of the ingredients into an individual sized Tupperware container, give it a good stir, seal with an airtight lid and place in your fridge overnight! Enjoy cold or warm!
Add in some extra liquids prior to serving if you would like and add in your toppings prior to serving!
