One Pan Shrimp Bake
I’m such a huge fan of shrimp. Really shrimp of any kind will do. I think it started when I was little and discovered the awesomeness that is shrimp cocktail because hello cocktail sauce. Now any kind of shrimp dish is my go to fish dish. It’s mild so everyone in the family loves it and when you get it already cleaned up from the store, a ton of work is taken out of the prep.
I’ve even started having it as my optional protein for things like fajitas when we go out to eat. But seriously nothing is easier than putting everything on a single pan, putting it in the oven and letting the oven take care of the rest. I mean really, some nights we just have too much going on for me to be standing over a stove top for like 30 minutes trying to handle dinner.
On the days that are even crazier than normal, I’ll even prep everything for dinner the night before, throw it all into a huge Ziplock in the fridge and then all I have to do is put it on a pan and in the oven the next day.
Really it doesn’t get any easier than that. But it has gotten more delicious since the discovery of this little gem at Trader Joe’s called Chile Lime Seasoning. I’ve been a huge fan of Tajin for as long as I can remember. Don’t know what Tajin is? It’s a seasoning that’s amazing for adding a little kick to fruit like jicama, watermelon, mango, pineapple, or even peaches.
In the summer time, with all the amazing rock fruit, Tajin lives in bulk at my house to go on all of those things with a squeeze of lime to really kick it up a notch.
Initially, I thought that the Chile Lime Seasoning would be similar, but this one takes things to a whole new level because the texture is amazing for meat and fish as well.
Toss in some fresh bell peppers and some artichokes and it’s an amazing meal. We’ve done it just on its’ own or over rice if you want more of a “bowl” or even over greens if you want it to feel more like a salad. Maybe you base it off of how you’re feeling in that particular moment, or if you’re like me, you base it off of what’s available in your house. Because I’m not trying to make unnecessary trips to the store if I don’t have to.
But this one on a summer evening is just too good to even try to pass up!
One pan shrimp bake
Prep time: 10 minutes
Bake time: 15 to 20 minutes
Serves: 4 people
2 tablespoons olive oil
1 pound shrimp, peeled and de-veined
1/2 red onion, diced
2 cloves of garlic, minced
1 red bell pepper, diced
1 orange bell pepper, diced
1 cup artichoke hearts, diced
2 tablespoons Chile Lime Seasoning
Juice of one lime
Preheat oven to 400 degrees, grab your biggest cooking sheet and line it with tin foil, then spray it with non-stick spray. Grab all of your ingredients, toss them with the olive oil and Chile Lime Seasoning, spread them in a single layer on the cooking sheet and bake for 15 to 20 minutes or until the shrimp is cooked and the vegetables are done to your liking. Squeeze the lime over the top of everything and enjoy!
Serve it over rice or salad greens if you’re feeling fancy!
