i could eat chips and salsa everyday

I wouldn't even feel bad about it. Seriously. Now that it's officially summer, it's the perfect excuse to have fresh salsa in my fridge everyday.

It's a great treat to have by the pool when I'm splashing around with the kiddo, it's the perfect snack on a warm afternoon, really chips and salsa always works.

But fair warning, those tiny serrano peppers pack a serious punch especially if you're not used to some spicy heat. If that's not your thing, take it down a notch with jalapeño peppers, or even one pepper (or half) instead of two!

Super Easy Spicy Salsa

Prep time: 10 minutes

Cook time: 2 hours (for chilling in the fridge)

Serves: 6

2 serrano peppers, seeded and diced

1 red onion, diced

4 roma tomatoes, diced

2 garlic cloves, minced

a bunch of cilantro, chopped

juice of 2 limes (or more if you like it!)

salt to taste

Combine everything in a bowl, give it a good stir, cover and let chill for at least 2 hours before serving with the chips you love!
