Hummus

I absolutely LOVE hummus. Hummus of all kinds. But the traditional, simple hummus is the perfect snack with some cut up cucumber or baby carrots, even a cracker or some cheese. It's such an easy snack to grab from your fridge that will leave you feeling satisfied and is an amazing source of healthy fats. Obviously any snack I can get my hands on that doesn't leave me thinking about the nutritional quality, but tastes delicious and is easy to grab, is a total win for me!

so i was buying hummus

In bulk form from Costco because my whole circus loves it. We eat it almost daily. Like i said, it's an easy, healthy snack so it's a good thing to have on hand for when you feel like you need a little something'. But then I started looking into the actual cost of what it would take to make my own hummus verses what I was paying for it in the stores, as well as how often I was buying it in the store (because we do have it that often), and I became determined to save that extra cash by making my own hummus.


it took awhile to figure out a recipe

That would taste delicious while keeping the balance of hummus. For me, the amount of olive oil in the hummus has been key. I have found that to create a smooth texture in the chickpeas, I need to have more olive oil than what I initially thought would be work. I personally also like a little more lemon in my hummus because the I totally love the vibrance in flavor the lemon provides. So play around with it a little bit to figure out what would work the best for you. More lemon, less lemon, more garlic perhaps? It's such a simple recipe that you can play up certain flavors just by adding in more of that ingredient to make it work for your palate!

Hummus

Prep Time: 15 minutes

Cook Time: 2 hours

3-4 cloves of garlic, minced

1 15 oz can of garbanzo beans, rinsed and drained

1/4 cup tahini

1 tsp salt

Juice of one lemon

2-4 tblsp olive oil

Place the garlic and the garbanzo beans into a food processor and mix until finely chopped. Add in the tahini, salt and lemon and process until well mixed, and then slowly stream in the olive oil until smooth. Store in an air tight container for up to 4 days in your fridge and enjoy!
