Ham and Cheese Crepes

I love crepes. They're so light and delicious, they pair well with sweet or savory. But they intimidate me like crazy! The thought of actually having to make my own crepes is something I never entertained. So when I found them pre-made at our whole food store, I felt like it was a major victory! All the deliciousness of the crepes I love, without having to make them! 

Ham and Cheese Crepes

Prep: 10 minutes

Cook Time: 20 minutes

Serves: 4

4 pre-made crepes

2 tbsp olive oil

1/4 cup onion chopped

1/2 cup pre-cooked ham, diced

6 eggs

1/4 cup heavy cream

salt and pepper to taste

1/4 cup cheddar cheese

Heat the crepes up in your microwave for around 30 seconds. Heat your oil up on medium heat in a medium saute pan, salute the onion until translucent around 3 to 4 minutes. Add in the ham and sauté until heated through, around 4 minutes.

In a separate bowl, beat the eggs, add in the heavy cream and the salt and pepper. Add the egg mixture into the ham and onion mixture and scramble the eggs until cooked through. Turn off the heat and add in the cheese, mixing until the cheese melts.

Take one crepe, place 2/3 cup of your egg mixture onto the crepe, and roll the crepe up like a burrito. Serve with whatever toppings you like! Enjoy!
