Ground Turkey and Spinach

I am obsessed with this recipe because not only is it SO easy to make but it also uses tons of ingredients in a sneaky way, making it beyond healthy and without anyone realizing it! I’m also a huge fan because this one utilized things that I normally just have in my house. Like garlic. And bone broth. And rice. Well and now Finideni since I refuse to eat rice without it.

It’s not even really that time consuming to make and it’s the perfect dinner for after a long day when you want something hearty without all the calories that are typically associated with “hearty” food. The kids will probably love it because the spinach turns the rice green which is fun but they won't realize they’re eating spinach which is also a win for you!

There’s tons of versatility with it too depending on the seasonings your family likes or the flavor you’re trying to accomplish that night (which for me is always based off of what sounds delicious in my head). My go to spices are always garlic, salt, pepper, onion, oregano, red pepper flakes and cumin but feel free to play around and see what works for you and what your family prefers!

Ground turkey and spinach

Prep time: 15 minutes

Cook time: 30 minutes

Serves: 4

Spinach

2 tablespoons of olive oil

1 bunch of spinach, washed

3 cloves of garlic, minced

1/2 cup to 1 cup of bone broth

Juice of one lemon

Turkey

2 tablespoons of olive oil

1 onion diced

3 cloves of garlic, minced

1 pound of ground turkey

Spices to taste

Rice

2 cups of brown rice

3-4 cups of bone broth

I usually start with the spinach, so grab your medium skillet, put it on medium heat and add in your garlic, sautéing until it’s fragrant, around 1 minute. Add in your spinach leaves and saute until the spinach is slightly wilted, around 4 minutes. Squeeze your lemon over the top of it, and place everything into your blender. Add in the broth and blend until the mixture is completely smooth, adding in more broth if you need it to blend up the spinach. Set aside.

Grab your medium sized pot to cook your rice. Add in your rice, add in your spinach mixture, add in your broth, cover and bring to a boil. Crack the lid and let it simmer until the rice is cooked all the way and all of the liquid is absorbed, around 30 minutes.

While your rice is cooking, grab that medium sized skillet you used for the spinach, add in your olive oil and heat over medium. Add in the garlic and the onion, sautéing until soft and fragrant, around 5 to 8 minutes. Add in your spices that you like to taste, saute for another minute or so until the spices become fragrant and then add in your ground turkey. Cook the ground turkey until cooked through and crumbly, add in more spices if you need it and serve hot with the rice!
