Black Bean and Corn Salad

i dropped the ball

I can’t even lie. I completely dropped the ball when it came to planning dinner. Not that dinner wasn’t planned, it definitely was and it was actually already made, I just didn’t have enough food.

I hate that…in my mind, I felt like what I had planned would be enough and then I got into cooking and I realized I definitely didn’t have enough food for the husband who still eats like he’s a teenager because his caloric burn is so out of control during the day. He just lives in the Land of Hungry, I’m not even kidding. I’ve never seen a person be able to consume the amount of calories he can consume without putting on weight like crazy. But that’s a story for another time.

So here I am standing in front of my refrigerator wondering what would pair nicely with the chicken tacos I have currently sitting on my stovetop, but also trying to figure out what I can make that won’t use ingredients from another recipe I’m planning on making this week. Oh and I didn’t want whatever I was going to make take forever to prep and cook because I was hungry. Ugh what a cluster. Well not really, but when you’re tired and coming off of a split shift, thinking about cooking is NOT what you want to do. Well it’s not what I want to do anyways.

Then I realized I had a jalapeño in my fridge that I didn’t need and then I realized I could make a corn salad. Seriously that was the evolution of this recipe, me thinking I have a jalapeño, it goes well with corn, what else can I throw into this salad?

All I have to say is thank goodness for delicious accidents because this was literally me throwing stuff from my pantry and fridge into a bowl, hoping for the best and it turned out great!

Black bean and corn salad

Prep time: 10 minutes

Serves: 4 people

1 cup of corn (frozen will work, just make sure it’s thawed out)

1 can of black beans, rinsed and drained

1 jalapeño, seeded and diced

2 tomatoes, diced

1 handful of cilantro, roughly chopped

1/3 cup of crumbled Cotija Cheese (but feta will work if you have that on hand)

Juice of 2 limes

Salt and pepper to taste

Put all of your ingredients into a large mixing bowl, mix it up and serve!

*If you have time to chill it, throw it in the fridge, covered, for an hour.
