Chia Seed Pudding
Life is all about convenience right? We're always trying to find ways to make things happen faster and easier, food included. There's nothing more convenient for me than being able to reach into my fridge and grab a snack. I don't have to prep anything, there's not a ton of dirty dishes, and I don't have to worry about if I'm making a healthy choice.
but if the snack is versatile
Then even better. This is one of those snacks that can be done totally dairy free, or even with another nut butter besides peanut butter. It can be an option for virtually everyone, regardless of dietary restrictions.
but you still get all the goodness
Of the chia seeds and the creaminess of the pudding. With the added cocoa powder, it gives a little chocolate kick if you need a little afternoon see treat. The best part is that one batch will make you enough for four days, and this one holds up really well in your fridge. So this one has become a regular in the weekend food prep rotation because we all love it, it's easy to make and it's a quick prep.
Chia Seed Pudding
Prep Time: 10 minutes
Cook Time: 4 hours
Serves: 4
1 cup yogurt of your choice
1 cup almond milk (or milk of your choice)
2 tbsp peanut butter or other nut butter
2 tblsp cocoa powder
1/4 cup chia seeds
Place the yogurt, almond milk and peanut butter into a medium large mixing bowl and whisk until smooth. Add in the cocoa powder and mix until blended together. Stir in the chia seeds until well combined and divide the mixture evenly into 4 tupperware containers. Let it set in the fridge for 4 hours or until well set. It will hold in the fridge for up to 4 days. Enjoy!
