Banana Muffins
Breakfast is a tough one in our house, especially during the week. It is usually happening amidst the chaos of getting ready for the day, when my only goal is to make sure we all leave the house with everything we need.
The other tough piece is that my kiddo is not a sweet eater, so the syrupy breakfast isn't her thing but she also doesn't eat eggs. I know right? It's not like I haven't tried giving them to her a million different ways, and she has for sure tried them a million different ways, they're just not her thing right now. Quite honestly she would eat bacon everyday, but in the morning before school and work and life starts, I don't have time to make bacon to the desired crispness she requires.
But she LOVES muffins, she even calls them cupcakes because she doesn't realize that there's a difference. She also loves banana so this one is a total staple for us because I can make them in bulk ahead of time and they hold up in the freezer for up to 3 months. So if I'm ever in a pinch or even if she just wants one as a snack, it's a really easy option to get ready for her. The other positive is that she likes making them with me so we have a pretty good time getting them ready for the week too!
Banana Muffins
Prep Time: 15 minutes
Cook time: 30 minutes
Serves: 12
1 1/2 cups of flour of your choice
3/4 cups of sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
pinch of salt
1 egg
1/3 cup butter, softened
3 bananas, mashed
1 tsp vanilla
Preheat your oven to 350 and line your cupcake pan with liners or spray it with non-stick spray.
Combine all of your dry ingredients in a medium bowl, whisk together until well combined and set aside. In a separate bowl, mash the bananas and set aside. In another separate large bowl, combine all of your wet, beating until well combined.
Add the bananas to the wet ingredients and mix until well combined and then slowly add the new wet mixture to the dry mixture until combined.
Scoop out into your muffin pan, bake for 25-30 minutes or until the center comes out clean on a fork. Let cool and serve! Enjoy!
